Countless homemade puddings I got to enjoy growing up. I would asked Ama (Mom) …did you make pudding today?

My daughter, just turn 10 and she is a honey lover. With breakfast she pours in several swirls of honey over her granola, muesli, cereal or plain yogurt.  As many moms know, honey is not an ingredient that we would use with babies under one year of age and we would wisely always consult with our pediatrician before sharing the taste of honey with infants.

Once our kids have passed the stages of infancy, honey is a wonderful and natural companion to a variety of breakfast plates, afternoon snacks or with drinks.Honey and vanilla are two particular ingredients that I will always find in my pantry. Always. For them, to share a very simple, soft pudding which we all love (specially growing up), these baby puddings are soft enough to melt in your mouth, firm enough to maintain the shape they hold, and delicate enough to balance very well the taste of whole milk, vanilla extract, and fine sugar.

These puddings resemble white canvasses, giving our little ones the opportunity to dress them up with any combination of raw or compote-based fruits, sauces, coulis, toppings, etc. How fun is this? For them and us. We kept them simple and my daughter and I just added clover honey to our little puddings.

They are light, soft, delicate, lightly scented with vanilla, and if vanilla pasted is used, the visually appetizing vanilla specks around the edges and bottom make me happy. Love that. These puddings are great for an afternoon snack, goûter, or as a family dessert. Amazing!

  • 1½ tablespoons powdered gelatine
  • 3 tablespoons water
  • 2¾ cups (685ml) milk
  • ¼ cup (55g) caster (superfine) sugar
  • 3 tablespoons honey
  • 1 teaspoon vanilla extract
  • honey, extra, to drizzle
  • Place the gelatine and water in a saucepan over low heat and stir until dissolved. Add the milk, sugar, honey and vanilla and heat, stirring until the sugar is dissolved, for 5 minutes. Pour into 6 x ½ cup-capacity (125ml) cups and refrigerate for 4 hours or overnight.
